I feel I am mostly struggling on grind size and pour timing. I've played with settings on the Encore from 15 up to 28 with my favorite results coming in around 18 thus far. I've read a lot about people getting great results with long brew times with the Chemex but I haven't been able to get it past maybe 5 min. I also read a lot about people grinding super coarse and with final brew times in the 3-4 minute range but I have not enjoyed results when grinded course. Not unhappy with my results but just don't feel that I've found the sweet spot.
